The first step in creating a traditional chicken meal is to season chicken pieces, like drumsticks, breasts, or thighs, with salt, pepper, and your preferred herbs, such as rosemary or thyme. Heat a little amount of oil in a large skillet or Dutch oven over medium-high heat.

Sear the chicken until it is golden brown on all sides. Take out and reserve the chicken. Add a splash of chicken stock or white wine to the pan, scraping off any browned pieces for more flavor, and then deglaze it once the chopped onions, garlic, and carrots have softened in the same pan.

Add enough liquid to slightly submerge the chicken, put it back in the pan, and bring it to a simmer. The chicken should be cooked through and tender after 30 to 40 minutes of cooking on low heat with the pan covered.

For added richness, you can optionally whisk in a pat of butter or a small amount of cream toward the end. For a hearty, filling supper, serve the chicken hot with the vegetables and sauce over crusty bread, mashed potatoes, or rice.

  2. Season with salt, pepper, and herbs (such rosemary or thyme).

  3. One chopped onion, two minced garlic cloves, and two sliced carrots

  3. Sear the chicken for 4 to 5 minutes on each side, or until golden brown on all sides.

  4. Take out the chicken and put it aside.

Sauté the vegetables:

  1. Add the carrots, garlic, and onions to the same pan.

  2. Cook until tender, 3 to 5 minutes.

Deglaze pan:

  1. Pour in a little white wine or chicken broth.

  2. Scrape up the browned bits from the pan's bottom.

Simmer the chicken:

  1. Put the chicken back in the pan.

  2. Halfway through, add enough broth to cover the chicken.

  3. After bringing to a simmer, lower the heat to low.

  4. Cook, covered, until the chicken is cooked, 30 to 40 minutes.

Complete and Present:

  1. For added richness, you can optionally stir in a pat of butter or a dash of cream.

  2. Serve hot over crusty bread, mashed potatoes, or rice with vegetables and sauce.
